It seems like it has been forever since we
shared Tea on Tuesday.
I hope everyone had a fantastic holiday
and New Year Celebration.
This time of year, many people seem to renew their interest
in getting "fitness-y" and are more health conscious.
I even found myself interested in some new salad
ideas and just love what YUMMY MUMMY
offered this week, check it out HERE!
This inspired me pull out my all time favorite salad
recipe to make for Tea Party Tuesday this week.
This is something that is great anytime of year and
definitely can serve as a meal itself, or delightful side!
I call it Fruit Frenzy Poppyseed Salad, but you
might recognize it as very similar to Panera's seasonal
strawberry poppyseed salad that is so delicious!
I often add a grilled chicken breast and that is a
wonderful source of protein.
This could not be more simple to make.
Plus, it tastes phenomenal and is GOOD FOR YOU!
Ingredients:
Romaine and Spinach salad leaves
Strawberries cut-up
blueberries
mandarin oranges
pineapple
toasted pecans
*to be honest, I don't really measure the amount of fruit I put in but usually I just cut cup a container of strawberries, use 1 container of blueberries, 1 can of mandarins and 1 small can diced pineapple (juices drained) and throw what I want in there!
Poppyseed salad dressing
1/2 cup vinegar
1 cup sugar
1 1/2 teaspoons Dijon mustard
2 cups vegetable oil
2 tablespoons poppy seeds
Combine vinegar, sugar and mustard in container of electric blender.

Process on low while gradually adding oil.
After thoroughly blending, add poppy seeds and stir until mixed through.
Chill.
Makes 2 1/2 to 3 cups Per Serving

I enjoyed this salad today with a nice hot
cup of Vanilla Caramel Truffle!
I must say that I am very excited for 2012. I feel very, very blessed.
I have the world's best husband for sure and my
child is just the absolute bee's knees, seriously,
that kid just cracks me up!

ohhh the fruit frenzy poppyseed salad look delicious!! i think i need to eat more salad if i wanted to lose weight in the new year! thanks for sharing the recipe as i need it printed out to try and make! the vanilla caramel truffle is heavenly! perfect combination! Now I know what I'm using the three mandarin oranges in my crisper for! This salad looks delicious and the poppyseed dressing is a new one for me. Anxious to try it!

This will be me having salad with my tea - I'm dieting like everyone else. I've not thought to photograph my salads as I put all sorts of things on them and have to look hard for sweets to show. :-)
